ISO 22000 client experienceWhat it is
What is ISO 22000 and what is it used for?
ISO 22000 is the international standard for food safety management systems. It sets out what an organisation anywhere in the food chain must do to identify the food safety hazards in its products and processes, control them at the right points and prove, with records, that they work. It combines four elements: interactive communication along the food chain, system management on the structure shared by the ISO management system standards, prerequisite programmes, and the Codex HACCP principles.
The standard works on two levels at once. Clauses 4 to 7, 9 and 10 run the management system, from context and leadership to internal audit, management review and improvement. Clause 8 runs the operation: PRPs, traceability, emergency preparedness, hazard analysis, the hazard control plan with its OPRPs and CCPs, validation, monitoring, verification and the handling of unsafe product up to recall. The certificate is only worth having when the two levels talk to each other.
Current edition. ISO 22000:2018, published in June 2018, replaced the 2005 edition and is the edition certificates are issued against. Amendment 1:2024, published in February 2024, adds a requirement to determine whether climate change is a relevant issue for the FSMS and a note that interested parties can have climate-related requirements; nothing else changes. A third edition is in preparation: the draft international standard, ISO/DIS 22000, completed its ballot in July 2026, and ISO has announced neither a publication date nor a transition arrangement. Until then, first-time implementers build to the 2018 edition with the amendment, and existing certificates are unaffected.
Who it is for
Who needs ISO 22000 certification?
ISO 22000 was written for every link in the food chain, not only for factories: from feed and farming through ingredients, manufacturing and packaging to storage, transport, catering, retail and the service suppliers around them. The certificate's scope names the products, processes and sites the system covers. Organisations come to Sterling for ISO 22000 from four situations:
- A retailer, export customer or brand owner requires certification. Many supply-chain and export requirements are written around GFSI-recognised programmes, and ISO 22000 on its own is not one of them. We confirm at the outset whether the customer accepts ISO 22000 or expects FSSC 22000, so scope, PRP standard and certification body are chosen once.
- A regulator or licensing authority expects a documented, HACCP-based system. Food business licences, export registrations and official inspections in most markets are built around HACCP and good hygiene practice. ISO 22000 organises that system so an inspector, a customer auditor and a certification body read the same evidence.
- An incident has put the brand at risk. A withdrawal, a foreign-body complaint or an allergen labelling error exposes what a paper HACCP plan was not controlling. The board wants a system that prevents the next one and shows due diligence.
- You have HACCP and want to move up. The plan exists, perhaps with a HACCP certificate, but with no management layer around it: no verification programme, no tested recall, no management review. ISO 22000 wraps the plan in a system; FSSC 22000 adds the sector PRPs and scheme requirements the largest buyers ask for.
The intended benefit is safe product and the evidence to prove it; that depends on an accurate hazard analysis and real monitoring on every shift, not on the certificate.
Business benefits
How ISO 22000 protects your customers, your brand and your licence to operate
A food safety management system is not a filing exercise; it is the set of decisions that keeps unsafe product from leaving the site. We start where a hazard is most likely to get through: a raw material accepted without a specification, a metal detector nobody challenges, a changeover after an allergen run, a temperature log completed from memory.
- Fewer incidents and recallsHazards identified from the actual flow diagram, controlled at CCPs and OPRPs with validated limits, and monitored on the line rather than reconstructed at month end.
- Access to demanding customersA certified system, extendable to FSSC 22000 when a retailer or export market asks for GFSI recognition, so supplier approval becomes a formality rather than a project.
- Inspections that go smoothlyPRPs, the hazard control plan, calibration and traceability records that answer the regulator's questions in the regulator's language, with licence evidence in one place.
- Faster, smaller recallsA traceability system that is tested, not assumed: a lot traced forwards and backwards in hours, quantities reconciled, customers and authorities contacted from a rehearsed procedure.
- Controls that hold across shifts and sitesThe same hazard control plan, monitoring forms and corrective-action rules on the night shift as on the day shift, and at the second plant as at the first.
- Suppliers and outsourced steps under controlApproved supplier lists, specifications, certificates of analysis and incoming checks matched to the hazards each material carries, co-packers included.
Measure hold-and-release volumes, CCP deviations, complaints by category, mock recall time and verification findings. If those improve, the system is working; a thicker HACCP manual is not evidence of anything.
Requirements
What are the main ISO 22000 requirements?
ISO 22000:2018 follows the harmonised structure of the ISO management system standards, clauses 4 to 10, with the food-safety-specific requirements in clause 8. The table is a plain-language map; during the programme your system is checked clause by clause against the standard.
| Clause | What it requires of you | What it looks like in practice |
|---|---|---|
| 4 Context of the organisation | Understand the issues, interested parties and food chain position that shape food safety, and define the FSMS scope | A scope naming the products, processes and sites to be certified; customer, regulatory and climate issues listed and reviewed |
| 5 Leadership | Commit to food safety, set the policy, assign roles, and appoint the food safety team and its leader | A policy people can explain, a food safety team leader with authority, and clear responsibility for hold, release and recall decisions |
| 6 Planning | Address risks and opportunities to the system, set measurable FSMS objectives and plan changes | Objectives such as CCP deviation and complaint targets with owners and dates; changes to lines, products or suppliers planned before they happen |
| 7 Support | Provide people, infrastructure, work environment, competence, awareness, communication and controlled documented information | Hygiene training records, communication with suppliers, customers and authorities, and documents with versions, approvals and owners |
| 8.1–8.4 Operation: planning, PRPs, traceability, emergencies | Plan and control the processes; establish prerequisite programmes; run a traceability system; prepare for emergencies and incidents | PRPs selected against the applicable ISO 22002 part and legal requirements; lot identification from supplier to customer; emergency procedures tested |
| 8.5 Hazard control | Collect the preliminary information, analyse the hazards, validate the control measures and build the hazard control plan | A food safety team, product descriptions, flow diagrams verified on site, a step-by-step hazard analysis, and a plan with critical limits at CCPs and action criteria for OPRPs |
| 8.6–8.8 Updating, measuring and verification | Keep PRP and plan information current, calibrate or verify monitoring equipment, and verify that PRPs and the plan are implemented and effective | Calibration records, verification schedules, swab and product testing results, and an analysis of what the results say |
| 8.9 Nonconforming product, withdrawal and recall | Correct deviations, handle potentially unsafe product, and withdraw or recall product with tested effectiveness | Hold-and-release records, corrective actions with root cause, a recall procedure and mock recall reports |
| 9 Performance evaluation | Monitor and measure, analyse the results, audit internally and review the system at management level | Trended verification and complaint data, an internal audit programme covering PRPs and the plan, and a management review that decides |
| 10 Improvement | Act on nonconformities, improve continually and update the FSMS as knowledge changes | Corrective actions closed with evidence, and the hazard analysis revisited when products, processes, hazards or regulations change |
What does useful ISO 22000 evidence look like?
A food safety team able to defend its hazard analysis; flow diagrams confirmed on the floor; a hazard control plan whose limits were validated, not copied; PRP, OPRP and CCP monitoring records completed at the time, on the line; calibration of thermometers, scales and detectors; allergen and traceability records that reconcile; a mock recall that was run and timed; and verification results analysed, not filed. These records live in Effivity from the first workshop, so the auditor sees a system that runs.
ISO 22000 requirements explained, clause by clauseCertification process
How do you get ISO 22000 certified?
Build and operate the system first; then an independent certification body audits it. Sterling prepares your organisation and builds the system with your team. The certification decision belongs to the certification body, and that independence gives the certificate its value with customers and regulators.
- 01Define the scope and the target.Products, process lines, sites, shifts and headcount; ISO 22000 or FSSC 22000; the food chain category and the ISO 22002 part that applies.
- 02Gap analysis: review the current system against the requirements.PRPs, the existing HACCP plan, records and infrastructure are reviewed against the standard, and the actions, owners, dates and resources are agreed.
- 03Implement and generate evidence.Establish the PRPs, appoint the food safety team, complete the hazard analysis, validate the control measures and run the monitoring, traceability and calibration records in daily work.
- 04Verify, audit and review.Verification activities, a mock recall, internal audit and management review test the system; findings are raised by us first and closed with evidence.
- 05Complete the certification body's assessment. The certification body's Stage 1 readiness review, then the Stage 2 audit on site; respond to any findings and await its decision.
- 06Keep the system running after certification.Monitoring, verification, internal audits and reviews continue, with surveillance audits each year and recertification in the third year.
Check the credibility of the route as carefully as the price. Ask which certification body will audit, which accreditation body accredits it for food safety management systems and whether the audit follows the ISO 22003-1 rules on audit time and food chain categories, then verify it with those bodies. Be cautious of offers that skip implementation: a certificate that fails a retailer's supplier check leaves the hazards uncontrolled and the fee spent. Cost
How much does ISO 22000 certification cost?
No single price fits every food business. A single-line beverage plant with a sound HACCP plan and a multi-site group building PRPs from the ground up are different projects. Every Sterling proposal gives you an all-inclusive proposal with every component in view.
| Cost component | What affects it |
|---|---|
| Consulting and implementation | Maturity of the PRPs and the HACCP plan, number of products and process flows, sites and shifts, and how much of the work your team carries (Design™ or Drive™) |
| Independent certification | The certification body's audit time, set under ISO 22003-1 by food chain category, HACCP studies, employees and sites; travel; annual surveillance; for FSSC 22000, the unannounced audit and scheme fees |
| Internal resources | Food safety team time, supervision at the line, training hours, laboratory testing, validation studies and any infrastructure work the PRPs need |
| Software and learning | Included in a Sterling engagement: Effivity for the FSMS and Sterling Academy access for your people, with users, courses and access period confirmed in the proposal |
| Continued support | Verification reviews, internal audits, mock recalls, refresher training and future scheme or edition changes under Sustain™ |
What moves the price
- Number of sites, product families and distinct process flows, hence of hazard analyses
- Whether the PRPs exist and hold, or the site needs pest control, zoning or hygiene works
- Whether a HACCP plan exists and was validated, or the hazard analysis starts from scratch
- ISO 22000 alone, or FSSC 22000 with the ISO 22002 sector PRPs and additional requirements
- Seasonality, shift patterns, languages on the floor and customer requirements
What a Sterling proposal always shows
- Deliverables, responsibilities, assumptions and exclusions, in writing
- Certification-body and scheme fees identified separately, so the programme cost is comparable
- Effivity, training and Academy access itemised at no additional cost
- Payment milestones tied to deliverables, not to the calendar
- One all-inclusive proposal. No surprises, ever
Timeline
How long does ISO 22000 certification take?
A food safety management system has to run before it can be audited, and in food the running takes time. Control measures have to be validated before they are relied on, PRPs have to be in place, and monitoring, verification, calibration and traceability records have to accumulate over enough production to show a pattern. That is why the realistic range is four to nine months: the short end for a plant with a validated HACCP plan and sound PRPs, the long end where the PRPs need works or the hazard analysis is new. We build the plan around that evidence, with milestones your food safety team tracks in Effivity.
| Phase | What determines the pace |
|---|---|
| Scope and gap analysis | Access to the plant, the process flows, the existing HACCP documentation and the last inspection or customer audit |
| PRPs, hazard analysis and plan | The condition of the site, the number of products and flows, validation work such as testing or challenge studies, and approval times for works |
| Operation and records | Production running under the plan long enough for monitoring, verification, calibration and mock recall records to exist, then internal audit and management review |
| Certification assessment | The certification body's availability, Stage 1 and Stage 2 scheduling, and the time to close any findings |
If a customer audit, an export shipment or a licence renewal fixes the date, tell us on day one. We will say what is achievable and which decisions cannot wait. A certificate date promised before anyone has walked your line is a sales pitch, not a plan.
The general manager writes that the team showed professionalism, attention to detail and a deep understanding of food safety regulation throughout, and that prompt answers, a careful review of procedures and thorough training sessions set the business on the path to sound food safety management.
Challenges
Common ISO 22000 implementation challenges
Food safety programmes stall for reasons that repeat from plant to plant; each has a practical answer.
The HACCP plan was copied, not analysed.
A plan lifted from a template or a sister site carries CCPs that do not match the line and misses hazards that do. We rebuild the hazard analysis from flow diagrams confirmed on the floor, decide OPRPs and CCPs on the evidence, and validate the limits before anyone monitors them.
Prerequisite programmes need works, not documents.
Pest control gaps, damaged floors, open drains, no separation of raw and cooked. The gap analysis separates what a procedure can fix from what needs budget, and the plan sequences the works so certification is not held hostage to the last contractor.
Records are completed at the end of the shift, from memory.
Monitoring that is not done at the time is not monitoring. We simplify the forms to what the plan needs, train supervisors on why each check exists, and move CCP and OPRP records into Effivity so a missed check is visible the same day.
Traceability and recall have never been tested.
Lot numbers exist on paper, but nobody has traced one batch forwards and backwards or reconciled quantities. A mock recall early in the programme shows the gaps while there is time to fix the coding, the warehouse records and the contact list.
Several sites, several standards of hygiene.
One hazard control plan cannot be forced onto different lines, but PRPs, monitoring rules and corrective-action discipline can be common. We define the group standard, document the justified local differences and give management one Effivity view across sites.

How we deliver
How Sterling supports your ISO 22000 implementation
Every ISO 22000 engagement runs on Sterling OS™, our delivery operating system: five phases, each with defined deliverables, decision owners and the evidence it must produce. You choose how much of the work your team carries; the method, software and accountability do not change.
- 01Design™Guided implementation: your food safety team does the work with Sterling's structure, templates, workshops and coaching.
- 02Drive™Fully managed consulting: Sterling consultants carry the agreed consulting and documentation work with your food safety team and line supervisors.
- 03Sustain™After certification: verification reviews, internal audits, mock recalls, refresher and new-hire training, and surveillance readiness every year.
- 04Automate™The FSMS in Effivity: PRPs, the hazard control plan, monitoring, calibration, traceability, recall, audits and management review in one workspace.
- 05Revise™Moving from ISO 22000 to FSSC 22000, scheme version upgrades, the coming third edition of ISO 22000, and changes to products, lines, sites or regulation.
At the start we agree the engagement team, the weekly working session, the deliverables and who decides what. Progress is reviewed against those commitments weekly, so a slipping PRP or an unstarted validation study is visible in month two, not at Stage 1.

The food safety policy, the food safety team and its leader, and the authorities for hold, release and recall decisions recorded where the people concerned work; FSMS objectives reported from the system, not from a spreadsheet.
Risks, objectives and planned change
Risks and opportunities to the FSMS, measurable objectives with owners and dates, and a change log that triggers a review of the hazard analysis when a product, line, supplier or regulation changes.
Competence, communication and documented information
Hygiene and food safety training records for every person, linked to Sterling Academy; communication with suppliers, customers and authorities logged; documents with versions, approvals and controlled distribution.
PRPs, traceability, emergencies and recall
PRPs mapped to the applicable ISO 22002 part with their checks and records; lot traceability from receipt to dispatch; emergency and incident procedures; withdrawal and recall with the mock recall on record.
Hazard analysis and the hazard control plan
Product descriptions, flow diagrams, hazard identification and assessment by step, OPRPs and CCPs, validation evidence, monitoring records against critical limits and action criteria, and the corrections when a limit is missed.
Verification, internal audit and management review
Verification schedules and results analysed as trends; calibration due dates; audit programmes, findings and follow-up; a management review that records inputs, decisions and actions.
Nonconformity, corrective action and updating the FSMS
Nonconforming product, complaints and audit findings raised, investigated and closed with root cause and evidence; updates to the hazard analysis and PRPs recorded whenever the system learns something.
What this means at the audit
The certification auditor walks the line with the flow diagram, asks for the hazard analysis behind each CCP and OPRP, checks a day's monitoring records against the plan, picks a lot to trace, and reads the last mock recall, verification analysis and management review. In Effivity each is a screen with dates, owners and evidence attached. After certification, Sustain™ runs in the same workspace, so an audit, announced or not, finds a system that never paused.

ISO 22000 client experience
On the record: what clients say about working with Sterling.
The group quality manager writes that the consultants standardised food safety practice across several sites while allowing for operational differences, and that the training material was clear and useful for managers and frontline staff alike.
The food safety team leader reports that implementation was built around the company's own processes and existing HACCP plan, and that roles, operational controls, verification activities and corrective actions became much easier for employees to understand.
The quality manager, who led the ISO 9001 and ISO 22000 project, writes that the consultants showed solid knowledge of the standards, kept a professional and cooperative approach throughout, and that the work was organised and steady with useful guidance at each stage.

Case studies with ISO 22000 or HACCP in scope
What a food safety engagement looks like in practice.
- 01Read the case study
Restaurant chain: safe, consistent food at every location
A restaurant chain needed food that was safe, compliant and the same at every location. Under ISO 22000 and HACCP it applied strict controls, monitored its critical control points and dealt with risks early, reducing the likelihood of foodborne illness and keeping it within the regulations. Standard recipes, central preparation of food and checks at each stage gave customers a consistent experience; its chief executive said the system improved the whole chain, in the kitchen and at the table.
- 02Read the case study
Food and beverage manufacturing: food safety and consistency it can prove
A food and beverage manufacturer was confident in its products but needed systems that could demonstrate they were safe and consistent. ISO 9001, ISO 22000 and FSSC 22000 brought firm food safety controls, allergen management and preventive risk reduction, lowering the likelihood of recalls and protecting consumers. Standard procedures in production, routine quality checks and analysis of data kept quality consistent and raised customer satisfaction; its plant manager called the change a turning point for the business.
- 03Read the case study
Food distributor: quality and food safety managed across the cold chain
A food distributor that saw itself as simply moving product needed to manage quality and food safety across the cold chain. With ISO 9001, ISO 22000 and HACCP in place, real-time temperature monitoring, strict HACCP controls and early risk analysis sharply reduced the risk of products losing quality. Systematic records and smoother audits kept the supply chain in line with food safety requirements; its operations director said clients have more confidence and the results show in the bottom line.

Why Sterling
Want successful ISO 22000 certification? Come to Sterling.
Whether you run one line or plants in several countries, Sterling builds a food safety system that production can live with and an auditor can test. We reconcile customer specifications, national food regulations and the sector PRP standard for each site, so a group standard exists without pretending every plant is the same.
Food safety systems in 60+ countries since 2003
HACCP-based and ISO 22000 systems implemented for manufacturers, beverage plants, caterers, packaging producers and distributors, with one engagement team accountable across every country you operate in.
All-inclusive proposal
Consulting, Effivity, training and Academy access in one proposal, with certification-body and scheme fees identified separately. No surprises, ever.
A system the line can run
Forms your supervisors will actually complete, PRPs matched to your site and a hazard control plan with only the controls that matter, so the system is used on every shift, not tolerated at audit time.
Expert and experienced consultants
Consultants who have built food safety management systems across sectors and countries since 2003 and get the hazard analysis right the first time, so the certification audit confirms a system that already works.
The Sterling Promise
What our ISO 22000 certification success guarantee means
We stay with your organisation until the agreed ISO 22000 certification outcome is reached, through consulting, audit preparation and the closure of any findings the certification body raises. Plain explanations, practical delivery on the floor, and the software and learning included in the fee turn the programme into a capability your plant keeps.
The engagement defines the standard, the scope, the outcome and each party's responsibilities. Your organisation provides accurate information and operates the agreed controls. The independent certification body audits and retains its certification decision. Our commitment concerns the agreed certification support; it is not a warranty that no food safety incident will occur or that every customer will approve you.
After certification
What happens after ISO 22000 certification?
The certificate opens a three-year cycle. The certification body returns for surveillance at least once a calendar year, the first within twelve months of the certification decision, and for recertification before the certificate expires; under FSSC 22000, at least one surveillance audit in each three-year period is unannounced. Between visits the system has to keep producing evidence: monitoring on every shift, verification and calibration on schedule, a mock recall, internal audits and a management review that reads the trends.
Products, suppliers, lines and regulations change faster than any audit cycle, and each change is a reason to revisit the hazard analysis. Under Sterling OS™ Sustain™ we run the verification reviews, internal audits and mock recalls with you, keep the hazard control plan and PRPs current as the plant changes, and prepare each surveillance audit.
FAQs
Frequently asked questions about ISO 22000
What is the difference between HACCP and ISO 22000?
HACCP is the Codex method for analysing hazards and controlling them at critical control points; it produces a plan. ISO 22000 is a certifiable management system standard that contains the HACCP principles and adds what a plan alone lacks: prerequisite programmes, traceability, emergency preparedness, validation, verification, internal audit, management review and improvement. In some markets certification bodies certify a HACCP system on its own, against the Codex code; ISO 22000 is the international management system certificate.
ISO 22000 or FSSC 22000: which do we need?
Ask the customer. ISO 22000 is the right target where a certified FSMS is what is expected. FSSC 22000 is ISO 22000 plus the sector PRP standard from the ISO 22002 series plus the FSSC additional requirements, and it is GFSI-recognised, which many large retailers and international brand owners specify. Everything built for ISO 22000 carries over.
Is ISO 22000 recognised by GFSI?
No. GFSI recognises certification programmes, not standards, and ISO 22000 on its own is not on its list; FSSC 22000, BRCGS, SQF and IFS are. If a supplier questionnaire asks for GFSI certification, FSSC 22000 is the route that reuses an ISO 22000 system in full.
Which businesses can be certified to ISO 22000?
Any organisation in the food chain: feed and animal food, farming, ingredients, food and beverage manufacturing, packaging and food-contact materials, storage, transport and distribution, catering and food service, retail and wholesale, and suppliers of equipment, cleaning agents and services.
Do we have to use ISO 22002-1 for our prerequisite programmes?
Under ISO 22000 alone, no: clause 8.2 requires PRPs appropriate to your operation and asks you to consider the ISO 22002 series and legal requirements when selecting them. Under FSSC 22000 the applicable ISO 22002 part is mandatory. Most manufacturers use ISO 22002-1 either way, because auditors and customers know it.
What is the difference between an OPRP and a CCP?
Both are control measures selected through the hazard analysis to control a significant hazard. A CCP is a step where a measurable critical limit separates acceptable from unacceptable product, so a missed limit means the product is held as potentially unsafe. An OPRP is managed by action criteria, measurable or observable, where a deviation triggers a defined response and an assessment of the product. Both sit in one hazard control plan.
Does Sterling issue the ISO 22000 certificate?
No. Sterling consults, trains and prepares you. An independent, accredited certification body conducts the Stage 1 and Stage 2 audits and makes the certification decision. A provider offering to consult and certify in one contract is selling paper.
Is a new edition of ISO 22000 coming?
A third edition is in preparation: the draft international standard completed its ballot in July 2026 and no publication date has been announced. Certificates continue to be issued to ISO 22000:2018 with Amendment 1:2024, and any transition period will be set once the new edition is published. A system built on the 2018 edition will not start again; Revise™ handles the transition once the timetable exists.
Can we integrate ISO 22000 with ISO 9001, Halal or other standards?
Yes. ISO 22000 shares the harmonised structure with ISO 9001, ISO 14001 and ISO 45001, so context, leadership, documented information, internal audit and management review can be one system. Halal certification and customer schemes add their own requirements; the hazard control plan and the PRPs remain the food safety core.
Before the first call
Prepare a useful ISO 22000 readiness brief
No HACCP manual is needed before the first conversation. A short, accurate account of the operation and of who is asking for the certificate is enough. Seven questions:
- Who is asking, and for what: a retailer or export customer (does it specify GFSI?), a regulator or licence, or your own decision after an incident?
- Which products, process lines and sites should the certificate cover, and which steps, such as storage, transport or co-packing, are outsourced?
- Do you have a HACCP plan today, was it ever validated, and when was the hazard analysis last reviewed?
- What condition are the PRPs in: pest control, maintenance, cleaning, zoning, allergen handling, water and air?
- What do complaints, holds, rejected lots, customer audits and inspections say about the starting point?
- Who is on the food safety team, and who can take decisions and give time to implementation, verification and training?
- Is there a customer audit, a shipment, a licence renewal or an existing certificate expiry that fixes the date?
The answers let us scope the work and prepare a realistic proposal. This is preparation for a conversation, not a scored assessment or a certification decision.
Don’t be fooled by certification scams
If it takes ten days, it is not ISO 22000 certification.
A food safety certificate is only useful when the scope, the accreditation and the scheme answer what the customer or regulator actually asked, and when the system behind it survives a walk down the line. The market sells paper: certificates from bodies nobody accredits, consultants who promise to do everything while your people do nothing, hazard analyses copied from another factory. They are cheaper until a retailer's auditor, an export inspector or a recall tests them.
How to choose a credible ISO 22000 provider
- Ask who will issue the certificate and check its status and scope on the certification body's own public register and, for FSSC 22000, on the scheme's register.
- Confirm the accreditation for food safety management systems with the accreditation body itself, and whether it sits within the Global ACI multilateral recognition arrangement, which took over the roles of the IAF and ILAC in January 2026, rather than trusting a logo on a quotation.
- Ask how the hazard analysis will be done. If nobody plans to walk your line, confirm your flow diagrams and validate the limits, the plan will be someone else's with your name on it.
- Identify who carries each task, which audit and scheme costs are separate, and what support exists when Stage 2 raises findings.
- Ask what your operators will learn and what software the records will live in. No training and no system means monitoring stops the week the consultant leaves.
- Turn down "certified in 7 to 10 days", "we manage everything" and a single invoice for consulting and certificate. PRPs must be in place, control measures validated and records generated before any credible audit.
