In short

HACCP certification in Indonesia at a glance

In Indonesia, HACCP is asked for by buyers and schemes rather than required by law. The drivers below show where the pressure comes from.

Hazard analysis is the starting point for every food safety system an Indonesian producer will be asked about. HACCP's principles — identify hazards, set critical control points and limits, monitor, correct, verify and keep records — underpin ISO 22000 and FSSC 22000, and smaller processors, caterers and hotel kitchens often begin here because buyers ask for it first. Process mapping done for HACCP also serves a separate legal obligation: Undang-Undang Nomor 33 Tahun 2014 requires products traded in Indonesia to be halal-certified, with halal and non-halal processes kept apart, so the same flow diagrams and supplier records support both. No general legal requirement for HACCP certification was found for this page, so the buyer's specification decides which scheme to use. Certification is issued by a certification body, ideally one accredited by Komite Akreditasi Nasional (KAN). Sterling's Jakarta office builds the HACCP plan, prerequisite programmes and verification routine with the team who will run them. Local questions follow.

The need

Who needs HACCP in Indonesia, and what happens without it

In Indonesia the question rarely comes from a law. It comes from the buyer, the regulator or the partner that wants proof before it signs. These are the organisations that get asked.

  • Small and mid-sized food processorsHACCP is the foundation buyers ask for before ISO 22000 or FSSC 22000.
  • Food service, catering and hospitality operatorsCorporate clients and hotel groups ask for documented hazard control.
  • Producers preparing for halal certificationProcess mapping for HACCP also supports halal process separation.

Requirements

HACCP requirements in Indonesia

Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.

A team knows the product and processA competent team has described each product, its intended use and a verified flow diagram of how it is made.
Hazards are analysedEvery significant hazard at each step is identified, and the measures that will control it are decided.
Critical control points have limitsThe steps where control is essential are identified, each with critical limits that separate safe from unsafe.
Monitoring and correction are routineEach critical point is monitored, and corrective action is defined in advance and taken whenever a limit is breached.
The plan is verifiedChecks confirm the plan works, from validating limits to reviewing records and reassessing when anything changes.
Records prove itDocuments and records show the plan was followed, ready for customers, auditors and food inspectors.

In Indonesia these six sit alongside the local laws and regulations listed under drivers below; one system can evidence both. The detail is on the global hub: HACCP explained →

Time

How long does HACCP certification take in Indonesia?

There is no standard duration: it depends on your scope and on how much of the system already runs. In Indonesia these are the factors that set the timeline.

  • Number of products and process flows
  • Prerequisite programme maturity
  • Monitoring and verification records available

Sterling agrees a dated plan with you on the discovery call, once the scope is known.

Cost

How much does HACCP certification cost in Indonesia?

The cost has two parts: the consulting work to build and prove the system, and the certification body’s audit fees, which are quoted separately. In Indonesia these factors move both.

  • Number of sites and process lines
  • Certification body audit fees quoted separately from consulting
  • Facility or equipment changes for hygiene

Sterling gives one customised, all-inclusive proposal after the discovery call, never before the scope is agreed.

Choosing a partner

HACCP consultants and certification bodies in Indonesia

Two different organisations are involved. A consultant helps you build the system and prove it works; an accredited certification body then audits or assesses it and decides. Keeping the two separate is what makes the result credible to buyers and regulators.

  • Check that the body’s accreditation or approval covers HACCP and your sector, and that its certificates can be verified online.
  • Ask the consultant how the local requirements in Indonesia are mapped into the same system, so nothing runs twice.
  • Ask for client references in your sector; Sterling’s client letters are available on request.
  • Agree who owns the evidence and the tool after the engagement; with Sterling the system stays yours, in Effivity.

Laws and regulations that drive HACCP in Indonesia (1)

    InstrumentHow it treats the standard
Undang-undang (UU) Nomor 33 Tahun 2014 tentang Jaminan Produk Halal (as amended)Related
Products entering, circulating and traded in Indonesia must be halal-certified, with halal and non-halal processes kept separate; this standard is not cited.

Accreditation, audit language and remote audits in Indonesia

HACCP certification is issued by a certification body; choose one accredited for the scope by Komite Akreditasi Nasional (KAN) or another accreditation body within the international mutual recognition arrangements (Global ACI — Global Accreditation Cooperation Incorporated, formerly the IAF MLA). Check whether your buyer or sector regulator prescribes a specific HACCP scheme. No body is named here unless verified. Edition and transition details: HACCP hub →

    Audit language

Audits are conducted in Bahasa Indonesia or English; agree the audit and document language with the certification body at application.

    Remote and on-site

Remote audit elements are at the certification body's discretion under its accreditation rules; operational sites are normally visited on-site.

HACCP in Indonesia: questions clients ask

Is HACCP certification compulsory in Indonesia?

No general HACCP certification mandate was verified for Indonesia. Whether you need it depends on sector rules and on what your buyers require, so ask your customers and check with the relevant sector regulator before you spend effort on certification.

Can HACCP and halal preparation be done together?

Yes, much of the preparatory work overlaps. Halal compliance under UU 33/2014 keeps halal and non-halal processes separate, and HACCP needs the same process mapping and supplier control. Doing the mapping once, then using it for both, avoids duplicated records.

When should we move from HACCP to ISO 22000?

Move when buyers start asking for a certified management system rather than a hazard plan. HACCP shows that hazards are identified and controlled, while ISO 22000 wraps that inside a wider system with management review and continual improvement. Let customer requests set the timing.
