HACCP certification in Czechia at a glance
In Czechia, HACCP is asked for by buyers and schemes rather than required by law. The drivers below show where the pressure comes from.
Every Czech food business needs a HACCP-based system, and that duty comes from EU hygiene law rather than from a certificate. Regulation (EC) No 852/2004 says operators must maintain a permanent procedure based on the HACCP principles, and SZPI, which sits under the Ministry of Agriculture, supervises the safety, quality and labelling of foods. Bakeries, brewers, processors and food-service operators therefore start from the same hazard analysis, critical limits, monitoring and records. Where a customer asks for independent evidence, a certification body accredited by ČIA, the national accreditation body, or an equivalent body can assess the system, and ISO 22000 or FSSC 22000 are the usual next steps. Sterling does not certify or inspect. Sterling's Frankfurt office builds and tests the plan on site, trains your team through Sterling Academy and includes Effivity with the engagement.
Who needs HACCP in Czechia, and what happens without it
In Czechia the question rarely comes from a law. It comes from the buyer, the regulator or the partner that wants proof before it signs. These are the organisations that get asked.
- Every Czech food businessRegulation (EC) No 852/2004 requires permanent procedures based on the HACCP principles.
- Producers asked by customers for independent evidenceRetail and export customers sometimes ask for third-party confirmation of the system.
- Small producers, bakers and food-service operatorsThey carry the same legal duty on a smaller scale and need a proportionate system.
- New food businesses preparing for first inspectionsSZPI supervises safety, quality and labelling, so a documented system is the starting point.

Take the HACCP readiness checkHACCP requirements in Czechia
Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.
In Czechia these six sit alongside the local laws and regulations listed under drivers below; one system can evidence both. The detail is on the global hub: HACCP explained →

How long does HACCP certification take in Czechia?
There is no standard duration: it depends on your scope and on how much of the system already runs. In Czechia these are the factors that set the timeline.
- Number of food activities and process steps
- State of hazard analysis and prerequisite programmes
- Staff training and monitoring records
- Certification body scheduling where certification is requested
Sterling agrees a dated plan with you on the discovery call, once the scope is known.
How much does HACCP certification cost in Czechia?
The cost has two parts: the consulting work to build and prove the system, and the certification body’s audit fees, which are quoted separately. In Czechia these factors move both.
- Number of sites and product lines
- Gaps in hazard analysis and monitoring records
- Certification body fees where used, quoted separately
- Monitoring and laboratory equipment
Sterling gives one customised, all-inclusive proposal after the discovery call, never before the scope is agreed.
HACCP consultants and certification bodies in Czechia
Two different organisations are involved. A consultant helps you build the system and prove it works; an accredited certification body then audits or assesses it and decides. Keeping the two separate is what makes the result credible to buyers and regulators.
- Check that the body’s accreditation or approval covers HACCP and your sector, and that its certificates can be verified online.
- Ask the consultant how the local requirements in Czechia are mapped into the same system, so nothing runs twice.
- Ask for client references in your sector; Sterling’s client letters are available on request.
- Agree who owns the evidence and the tool after the engagement; with Sterling the system stays yours, in Effivity.

| Instrument | How it treats the standard |
|---|---|
| Regulation (EC) No 852/2004 on the hygiene of foodstuffs | EU law Food business operators must put in place, implement and maintain a permanent procedure or procedures based on the HACCP principles. |
| SZPI (Státní zemědělská a potravinářská inspekce, the Czech Agriculture and Food Inspection Authority) | Supervision SZPI describes itself as the state supervisory body mainly for the safety, quality and correct labelling of foods; its pages do not make a third-party certificate compulsory. |
| ČIA (Český institut pro akreditaci, o.p.s.) as the Czech national accreditation body | Recognition ČIA describes itself as the national accreditation body founded by the Czech government, accrediting laboratories, inspection bodies and certification bodies for management systems, products and persons. |
Accreditation, audit language and remote audits in Czechia
For Czechia the legal duty is the HACCP-based procedure, not a certificate. Where a customer asks for independent HACCP certification, use a certification body accredited for food safety management certification by ČIA or by another accreditation body within the international mutual recognition arrangements (Global ACI — Global Accreditation Cooperation Incorporated, formerly the IAF MLA), and confirm the scope with the customer. Edition and transition details: HACCP hub →
Audit language
Czech is the official language and English is commonly used in business. Agree the audit language and the language of controlled documents with the certification body at application, and follow any language requirement in a contract or a regulator's procedure.
Remote and on-site
Reviews take place on-site because premises, hygiene and records must be seen; document review can be remote.
HACCP in Czechia: questions clients ask
Is HACCP mandatory for food businesses in Czechia?
Yes, in the sense of the duty rather than a certificate. Regulation (EC) No 852/2004 says food business operators must put in place, implement and maintain a permanent procedure or procedures based on the HACCP principles. Whether a particular activity has simplified arrangements is a question for SZPI or your counsel.
Who inspects a Czech food business?
SZPI is the state supervisory body mainly for the safety, quality and correct labelling of foods, and it sits under the Ministry of Agriculture. Its inspectors can ask to see your HACCP-based procedures and records. SZPI's pages do not describe a certificate as a substitute for that supervision, so keep the system current.
Is there a HACCP certificate recognised by Czech authorities?
Neither EU hygiene law nor SZPI's pages require one. The legal duty is a documented procedure, and any certificate is a voluntary, customer-driven addition. Where a buyer asks for it, choose a certification body accredited for food safety management certification by ČIA or an equivalent body, and confirm what the buyer will accept before paying for an audit.
How does HACCP connect to ISO 22000 for a Czech producer?
ISO 22000 includes HACCP principles within a wider management system, and ČIA lists ISO 22000 among its recognised certification scopes. A producer with a sound HACCP plan has much of the content, but ISO 22000 adds management commitment, communication and review. Use it when a customer wants a formal management system rather than only the procedure.
