HACCP certification in Austria at a glance
Lebensmittelsicherheits- und Verbraucherschutzgesetz (LMSVG), BGBl. I Nr. 13/2006 is the instrument itself: it applies to the organisations within its scope, and buyers and partners in Austria ask for evidence that you meet it.
HACCP is law before it is a certificate. Article 5 of Regulation (EC) No 852/2004 requires every food business operator in Austria to put in place, carry out and maintain a permanent procedure based on the HACCP principles and to keep records that show it works, while the Lebensmittelsicherheits- und Verbraucherschutzgesetz supplies the national frame on food safety requirements without demanding a third-party certificate. Independent certification therefore matters when a retailer, brand owner or scheme requires it, and then it must come from an accredited certification body, never from Sterling. Sterling's Frankfurt office works with your team on the hazard analysis, critical control points, monitoring and verification records, and rehearses the internal check, with Effivity and Sterling Academy included with the engagement.
Who needs HACCP in Austria, and what happens without it
In Austria the question rarely comes from a law. It comes from the buyer, the regulator or the partner that wants proof before it signs. These are the organisations that get asked.
- Every Austrian food business operatorArticle 5 of Regulation (EC) No 852/2004 requires a permanent procedure based on the HACCP principles, with documents and records.
- Manufacturers whose customers ask for a certificateThe legal duty is to run the procedure; a third-party HACCP certificate is a customer or scheme request, not a statutory one.
- New or expanding food producersA documented hazard analysis, critical control points and monitoring records are needed before inspections and customer audits.
- Caterers, packers and distributorsThey run the same procedure scaled to their activity, and the LMSVG supplies the national food safety frame.

Take the HACCP readiness checkHACCP requirements in Austria
Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.
In Austria these six sit alongside the local laws and regulations listed under drivers below; one system can evidence both. The detail is on the global hub: HACCP explained →

How long does HACCP certification take in Austria?
There is no standard duration: it depends on your scope and on how much of the system already runs. In Austria these are the factors that set the timeline.
- Number of products, processes and production lines
- Quality of hazard analysis and prerequisite programmes
- Validation of critical limits and monitoring
- Certification body scheduling
Sterling agrees a dated plan with you on the discovery call, once the scope is known.
How much does HACCP certification cost in Austria?
The cost has two parts: the consulting work to build and prove the system, and the certification body’s audit fees, which are quoted separately. In Austria these factors move both.
- Scope, sites and product ranges
- Remediation of hygiene, allergen and traceability controls
- Certification body audit fees, quoted separately
- Laboratory testing and calibration
Sterling gives one customised, all-inclusive proposal after the discovery call, never before the scope is agreed.
HACCP consultants and certification bodies in Austria
Two different organisations are involved. A consultant helps you build the system and prove it works; an accredited certification body then audits or assesses it and decides. Keeping the two separate is what makes the result credible to buyers and regulators.
- Check that the body’s accreditation or approval covers HACCP and your sector, and that its certificates can be verified online.
- Ask the consultant how the local requirements in Austria are mapped into the same system, so nothing runs twice.
- Ask for client references in your sector; Sterling’s client letters are available on request.
- Agree who owns the evidence and the tool after the engagement; with Sterling the system stays yours, in Effivity.

| Instrument | How it treats the standard |
|---|---|
| Regulation (EC) No 852/2004 on the hygiene of foodstuffs, Article 5 | The regulation itself Food business operators put in place, implement and maintain a permanent procedure based on the HACCP principles and keep documents and records that show it is applied. |

Accreditation, audit language and remote audits in Austria
HACCP is a legal duty, and a third-party HACCP certificate is optional. Where a customer or scheme requires one, choose a certification body accredited for the relevant scheme by Akkreditierung Austria or another accreditation body within the international mutual recognition arrangements (Global ACI — Global Accreditation Cooperation Incorporated, formerly the IAF MLA), and check its scope. No body is named here. Edition and transition details: HACCP hub →
Audit language
German is the official language of Austria and English is common in international groups and technology firms. Agree the audit language and the language of controlled documents with the certification body at application, and follow any language requirement in a contract or a regulator's procedure.
Remote and on-site
Certification audits are on-site because they examine production steps, monitoring and records; any remote element is at the certification body's discretion.
HACCP in Austria: questions clients ask
Is HACCP mandatory for food businesses in Austria?
Yes, as a procedure. Article 5 of Regulation (EC) No 852/2004 requires food business operators to put in place, carry out and maintain a permanent procedure based on the HACCP principles and to keep documents and records matching the size of the business. The regulation does not require a certificate. Confirm any specific obligation with the competent authority or your counsel.
Do I need a HACCP certificate or just a HACCP plan?
The law requires the procedure, not the certificate. The LMSVG is the national frame on food safety requirements and does not itself demand third-party certification. A certificate becomes relevant when a customer, retailer or scheme requires independent proof, so ask your buyers what they accept before spending on it.
What are the HACCP principles in practice?
The regulation lists them: identify hazards to prevent, eliminate or reduce; find the critical control points; set critical limits; monitor; define corrective actions; verify that the system works; and keep documents and records. You review the procedure whenever a product, process or step changes. A written hazard analysis and records that match what staff actually do are what inspectors look for.
Who certifies HACCP and what does Sterling provide?
An accredited certification body issues any certificate; Sterling does not. Sterling builds the plan with your team from its Frankfurt office, on-site where needed: hazard analysis, critical control points, monitoring sheets, training and internal verification, with Effivity and Sterling Academy included. You then choose the scheme and body that your customers recognise.
