HACCP certification in Denmark at a glance
In Denmark, HACCP is asked for by buyers and schemes rather than required by law. The drivers below show where the pressure comes from.
Denmark does not ask food businesses for a HACCP certificate; it asks for a working system. Fødevarestyrelsen says the egenkontrolprogram must be based on the seven HACCP principles and supported by a written risk analysis, with the risk analysis, programme and documentation ready for inspectors on paper or in digital form. Activities with no direct food-safety risk still need good working practices that staff can describe at inspection. Where a customer wants independent evidence, certification comes from a body accredited by DANAK or an equivalent accreditation body, never from Sterling. Sterling's Enschede office builds the hazard analysis, critical control points, monitoring records and training evidence from your own processes, then tests them in an internal review, with Effivity and Sterling Academy included with the engagement.
Who needs HACCP in Denmark, and what happens without it
In Denmark the question rarely comes from a law. It comes from the buyer, the regulator or the partner that wants proof before it signs. These are the organisations that get asked.
- Every Danish food businessFødevarestyrelsen says the self-check programme must be based on the seven HACCP principles with a written risk analysis.
- Producers asked by customers for evidenceCustomers often want an independent review of the programme, which is a customer request rather than a legal duty.
- Small producers and food-service operatorsThey need a practical programme with documentation ready at inspection.
- New food businessesStarting a food business means writing a risk analysis before activities begin.

Take the HACCP readiness checkHACCP requirements in Denmark
Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.
In Denmark these six sit alongside the local laws and regulations listed under drivers below; one system can evidence both. The detail is on the global hub: HACCP explained →

How long does HACCP certification take in Denmark?
There is no standard duration: it depends on your scope and on how much of the system already runs. In Denmark these are the factors that set the timeline.
- Number of food activities and process steps
- State of the written risk analysis and procedures
- Staff training records
- Certification body scheduling where certification is requested
Sterling agrees a dated plan with you on the discovery call, once the scope is known.
How much does HACCP certification cost in Denmark?
The cost has two parts: the consulting work to build and prove the system, and the certification body’s audit fees, which are quoted separately. In Denmark these factors move both.
- Number of sites and product lines
- Gaps in hazard analysis and monitoring records
- Certification body fees where used, quoted separately
- Laboratory or monitoring equipment
Sterling gives one customised, all-inclusive proposal after the discovery call, never before the scope is agreed.
HACCP consultants and certification bodies in Denmark
Two different organisations are involved. A consultant helps you build the system and prove it works; an accredited certification body then audits or assesses it and decides. Keeping the two separate is what makes the result credible to buyers and regulators.
- Check that the body’s accreditation or approval covers HACCP and your sector, and that its certificates can be verified online.
- Ask the consultant how the local requirements in Denmark are mapped into the same system, so nothing runs twice.
- Ask for client references in your sector; Sterling’s client letters are available on request.
- Agree who owns the evidence and the tool after the engagement; with Sterling the system stays yours, in Effivity.

Accreditation, audit language and remote audits in Denmark
For Denmark the legal duty is the self-check programme, not a certificate. Where a customer asks for independent HACCP certification, use a certification body accredited for food safety management certification by DANAK or by another accreditation body within the international mutual recognition arrangements (Global ACI — Global Accreditation Cooperation Incorporated, formerly the IAF MLA), and confirm the scope with the customer. Edition and transition details: HACCP hub →
Audit language
Danish is the official language and English is widely used in business. Agree the audit language and the language of controlled documents with the certification body at application, and follow any language requirement in a contract or a regulator's procedure.
Remote and on-site
Reviews take place on-site because premises, hygiene and records must be seen; document review can be remote.
HACCP in Denmark: questions clients ask
Is HACCP certification mandatory in Denmark?
The certificate is not, but the system is. Fødevarestyrelsen says a food business's self-check programme must be based on the seven HACCP principles and be supported by a risk analysis, with the documents available when inspectors visit. Third-party certification is a customer or scheme matter. Verify your category with Fødevarestyrelsen.
What must a Danish HACCP-based programme contain?
A risk analysis of the business's food activities, written procedures for activities that directly affect food safety, and documentation. Fødevarestyrelsen's guidance describes a risk analysis built from the activities, their risks and the ways of controlling them, then critical control points where needed. Activities without direct risk still need good working practices that staff can explain at inspection.
What do inspectors look at in the programme?
The documents the owner must keep available: the risk analysis, the self-check programme and supporting documentation such as traceability papers, withdrawal records and analysis results. Fødevarestyrelsen says documents may be on paper or digital as long as inspectors can see them during control. Prepare an index so records can be produced quickly.
Who would certify a HACCP system if a customer wants it?
Only a third party can, and only where a customer asks for it. Pick a certification body whose accreditation, from DANAK or an equivalent body, covers food safety management, and confirm the customer accepts its scope. Sterling does not certify; it writes the plan, builds the monitoring evidence and rehearses the audit with you.
