HACCP certification in New York at a glance
In New York, HACCP is sometimes a legal submission before it is a management choice. The Health Department requires a food service establishment that carries out a specialised process, such as vacuum packing, curing or fermenting, to submit a HACCP plan for approval, and its checklist spells out what the plan must contain. Beyond the kitchen, processors and wholesalers around Hunts Point meet buyers who ask to see hazard analyses and monitoring records. Sterling's New York office writes the flow diagrams, hazard analysis, critical limits and monitoring forms with the food-safety team, then trains staff to keep records that stand up at inspection. HACCP is a method, not a certificate, so ISO 22000 is the usual next step. Local questions follow.

HACCP in New York: questions clients ask
Which New York food processes need an approved HACCP plan?
The Health Department's checklist names specialised processes such as reduced oxygen packaging (including sous vide and vacuum packing), curing of fish, meat and poultry, drying meat and poultry, and fermenting foods that need refrigeration. Each such process needs a plan approved by the Department; confirm your own process with them.
Can a HACCP plan be sold on to other businesses?
Under the Department's checklist, food made under an approved HACCP plan cannot be sold or distributed to other business entities or sold packaged to consumers, and it must be prepared and consumed on the establishment's premises, with a narrow exception for premises owned by the same business. Check the current rule with the Department before planning any wholesale.
