HACCP certification in Chiang Mai at a glance
Two very different kitchens in Chiang Mai need the same discipline. One is a small food factory developing a new product with advice from CMU STeP; the other is a hotel or restaurant feeding visitors who arrive through Chiang Mai International Airport. HACCP asks both to draw the process, list the biological, chemical and physical hazards, decide where control is critical, set limits, monitor, correct, verify and keep records. For a young food business it is often the first certificate that makes a retailer or exporter comfortable; for a hospitality kitchen it protects guests and reputation. Sterling builds the plan with your cooks and supervisors, working from its Manila office with visits to Chiang Mai sites, and prepares you for an accredited certification body.

HACCP in Chiang Mai: questions clients ask
Who in Chiang Mai usually starts with HACCP?
Small food producers moving from local trade to retailers or exporters, and hotel and restaurant kitchens serving visitors. HACCP is practical to start with because it focuses on real hazards in real processes and produces records that buyers and auditors understand.
Does a Chiang Mai hotel kitchen need the same HACCP as a factory?
The principles are identical, but the hazards differ. A factory controls batch processes and packaging, while a hotel kitchen controls receiving, storage, cooking, cooling and service for many dishes. The plan should reflect how your kitchen actually works, so each site writes its own flow diagrams and limits.
