HACCP certification in Tokyo at a glance
At Toyosu and the other central wholesale markets, fish, vegetables and meat change hands at speed, and the Metropolitan Government's answer is a mix of daily hygiene inspection and quality and hygiene manuals built around HACCP. That makes HACCP a daily vocabulary for wholesalers and intermediate wholesalers, and for the caterers, processors and shops that source from them. HACCP means identifying the hazards in your process, choosing the critical control points, setting limits, monitoring, correcting deviations, verifying and keeping records. Sterling's Tokyo office turns the manual's general advice into a plan for your own flow, with monitoring sheets in Effivity and short Sterling Academy sessions for floor staff.

HACCP in Tokyo: questions clients ask
Who do Tokyo food businesses ask about HACCP-based hygiene management?
The Tokyo Metropolitan Government tells food businesses to consult the health centre responsible for their facility, and market tenants can also use the market office and its manuals. A certificate is optional unless a customer asks for one. Confirm the approach that applies to your type and size of business with the health centre.
Is HACCP certification different from the hygiene plan a Tokyo shop already keeps?
A hygiene plan shows what you do. Certification adds an outside check that the plan follows HACCP principles and that records prove it works. Customers such as hotels, caterers and exporters sometimes ask for that proof. Most shops can build on their existing plan rather than start again.
