HACCP certification in Chicago at a glance

Every food business in Chicago works to the same basic discipline: know what can go wrong, decide where it is controlled and keep the evidence. HACCP puts that into a documented system of hazard analysis, critical control points, limits, monitoring and corrective action. In a city where World Business Chicago reports food manufacturing among the nation's largest and where freight arrives by lake, rail and air, the buyers upstream and downstream increasingly ask suppliers to prove it. The Chicago Department of Public Health handles establishment licensing and inspection; a HACCP certificate is a separate, customer-driven document issued by an accredited certification body. Sterling writes and tests the plan from its New York office, with Effivity and Sterling Academy included.

What drives HACCP in Chicago

Demand is buyer-led: customers and higher-level schemes ask for HACCP; the city's food inspections are a licensing matter handled by the health department.

Requirements

What HACCP requires

Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.

A team knows the product and processA competent team has described each product, its intended use and a verified flow diagram of how it is made.
Hazards are analysedEvery significant hazard at each step is identified, and the measures that will control it are decided.
Critical control points have limitsThe steps where control is essential are identified, each with critical limits that separate safe from unsafe.
Monitoring and correction are routineEach critical point is monitored, and corrective action is defined in advance and taken whenever a limit is breached.
The plan is verifiedChecks confirm the plan works, from validating limits to reviewing records and reassessing when anything changes.
Records prove itDocuments and records show the plan was followed, ready for customers, auditors and food inspectors.

HACCP in Chicago: questions clients ask

Who in Chicago needs a HACCP system?

Food processors, packers and handlers of perishable freight, especially those supplying larger buyers. A HACCP plan identifies hazards and the points where they are controlled, and it underpins schemes such as FSSC 22000. Which products need a formal plan depends on federal and state rules, so check with the relevant authority.

Is a HACCP certificate the same as a Chicago food licence?

No. The Chicago Department of Public Health licenses food establishments and inspects them, while a HACCP certificate comes from an accredited certification body and answers a customer's request. One does not replace the other. Speak to the department about licensing in your category.
