In short

HACCP certification in Cape Town at a glance

In Cape Town, the first food-safety conversation is usually with the City. Its Environmental Health service issues Certificates of Acceptability, carries out unannounced inspections and food sampling, and investigates reports of food poisoning. HACCP is what turns those inspections from a surprise into a routine: hazards identified for each product, critical control points with limits, monitoring records and corrective actions kept ready. The national legal position on HACCP is set out on the South Africa page; this page is about the food businesses the City inspects, from caterers and bakers to fish handlers by the harbour. Sterling's Johannesburg office builds the plan around what you actually do and trains food handlers through Sterling Academy.

Requirements

What HACCP requires

Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.

A team knows the product and processA competent team has described each product, its intended use and a verified flow diagram of how it is made.
Hazards are analysedEvery significant hazard at each step is identified, and the measures that will control it are decided.
Critical control points have limitsThe steps where control is essential are identified, each with critical limits that separate safe from unsafe.
Monitoring and correction are routineEach critical point is monitored, and corrective action is defined in advance and taken whenever a limit is breached.
The plan is verifiedChecks confirm the plan works, from validating limits to reviewing records and reassessing when anything changes.
Records prove itDocuments and records show the plan was followed, ready for customers, auditors and food inspectors.

HACCP in Cape Town: questions clients ask

Does a Certificate of Acceptability replace a HACCP plan?

No. A Certificate of Acceptability is the City's permission to operate food premises, issued once it is satisfied that hygiene requirements are met. A HACCP plan is your own documented control of product hazards, and third-party HACCP certification is a further step that some regulated sectors and buyers ask for. Confirm with the City's Environmental Health office which documents apply to your premises.

Who inspects a Cape Town food business?

The City's Environmental Health service does, including unannounced inspections and food sampling, and it investigates complaints about unsafe or incorrectly labelled food. Keeping temperature, cleaning and supplier records current means a visit finds evidence rather than gaps. A certification body's audit is separate and happens by appointment.
