In short

HACCP certification in Guangzhou at a glance

Food reaches Guangzhou's airport zone in many forms: meals for flights, chilled produce, flowers, dairy. The zone's key-industry catalogue encourages airline meal delivery and cold-chain transport of perishables, so kitchens and handlers around Baiyun work to tight departure times. HACCP gives them a disciplined way to cope. It identifies the points where a hazard could enter or grow, sets critical limits there, monitors them, defines corrective action and keeps records, following the seven Codex principles. Some airlines and retailers accept a documented plan, others require it certified. Sterling helps Guangzhou food handlers write plans that crews follow, and prepares them for an accredited certification body when asked, serving the city from its Shanghai office with Effivity and Sterling Academy included.

What drives HACCP in Guangzhou

Demand is buyer-led: airlines, retailers and logistics customers ask for documented hazard control; no Guangzhou authority adds a separate HACCP rule.

Requirements

What HACCP requires

Strip away the vocabulary and HACCP asks a food business to prove six things about how it controls food safety hazards.

A team knows the product and processA competent team has described each product, its intended use and a verified flow diagram of how it is made.
Hazards are analysedEvery significant hazard at each step is identified, and the measures that will control it are decided.
Critical control points have limitsThe steps where control is essential are identified, each with critical limits that separate safe from unsafe.
Monitoring and correction are routineEach critical point is monitored, and corrective action is defined in advance and taken whenever a limit is breached.
The plan is verifiedChecks confirm the plan works, from validating limits to reviewing records and reassessing when anything changes.
Records prove itDocuments and records show the plan was followed, ready for customers, auditors and food inspectors.

HACCP in Guangzhou: questions clients ask

What do Baiyun meal-delivery kitchens control first under HACCP?

Cooking and cooling temperatures, holding times before loading, cross-contamination between raw and ready-to-eat items, and the cold chain from kitchen to aircraft. Each point needs a limit, a monitor and a recorded response when the limit is missed. Departure schedules make time-temperature records especially important.

Does a Guangzhou flower or produce handler need HACCP?

Fresh produce handlers do, because food hazards can arise from washing, storage and transport. Flower handlers generally do not, since flowers are not food. Their cold-chain and quality needs fall under other systems, such as ISO 9001. If you handle both, separate the food and non-food flows clearly in the plan.
